BINGHAMTON, N.Y. (WIVT/WBGH) – A local coffee legend is opening up a new cafe on Friday, where less is more.
Otto Coffee Roasters opens on Friday at the same address as the former Laveggio Roasteria at 178 State Street in Binghamton.
The owner of the former Laveggio Roasteria, Coe Young, is one of the business partners at Otto. He has over 25 years of experience roasting coffee.
Young personally roasts and tastes each batch of coffee to ensure its premium quality. He expects the menu to change every few months as certain coffee beans come in and out of season.
“I roasted a very specific way, on a drum roaster. The way I roast highlights and brings out the sugar node in roasted coffee. So, it’s very easy to burn off the sweetness and the sugars when you roast coffee. There’s a specific way you should do that to maintain sweetness,” said Young.
The space has been completed renovated, and Young takes pride in the business’ commitment to organic products and sustainability. He says Otto went to great lengths to get porcelain cups and dish ware from Italy to avoid any chemicals or plastics.
The cafe operations manager, Emma Dofton, says don’t come into Otto to order a laundry list of ingredients. She says the focus of the cafe is to highlight the depth and variety of flavors of black coffee.
“The way that we make our drinks is about the coffee. We have a couple of syrup offerings, they are house made, they are clean. We won’t be doing the cold foam, mocha lattes. We don’t be doing the sugared-up drinks because that’s not what we want to be giving to the people we care about,” said Dofton.
Young says everyone at Otto is knowledgeable about coffee and can help you find your flavor preferences.
The space was completely remodeled and will be open from 7 a.m. to 2 p.m. Mondays through Saturdays.
